OCEANA, WV (WVNS) — Sweet with spice and everything nice: Tarbilly’s grilling sauce and rub have all the flavors you can find in good barbecue.
It is all in the name. Tarbilly’s is the creation of Bobby Collins, a North Carolina native who relocated in West Virginia.
“It’s the combination of Carolina being the tar heel state and West Virginians being called Hillbilly’s. So I took the two and married them together, and I named it Tarbilly’s,” Collins said.
The sauces are sweet and tangy, like North Carolina barbecue, but have a ‘wow’ factor that can only be found in southern West Virginia.
Their motto for their staple grilling rub is ‘whether it walks on land or swims in the sea, everything is better with Tarbilly’s,’ according to Collins.
Bobby is not just the creator of these sauces and rubs, he is a barbecue grill master that has even been in grilling competitions. So, he knows a thing or two about cooking up some barbecue.
“We’re going to sprinkle it with our rub, both sides, and let them sit, 10, 15 minutes. Or however you want the flavor to penetrate. If you want to overnight, you can do that, that’s fine. And then we’re going to put them on the grill,” Collins described how he cooks ribs.
